Oceanside Ceviche
- 4 ounces, weight Fresh Sea Bass, Cut Into Bite Size Pieces
- 2 whole Fresh Limes, All The Juice And Half The Zest
- 2 Tablespoons Olive Oil
- 1- 1/4 Tablespoon Red Wine Vinegar
- 1/2 cups Diced English Cucumber
- 1/2 cups Diced Red Onion
- Sea Salt And Black Pepper To Taste
- Note: Preparation time does not include 1 hour refrigeration time.
- In a bowl (I use a clear glass bowl), add sea bass pieces, lime juice and zest.
- Gently stir.
- Add olive oil and red wine vinegar, and again gently stir.
- Cover with plastic wrap and refrigerate 1 hour.
- Remove from refrigerator.
- Add diced cucumber, diced red onion, and salt and pepper to taste.
- Gently stir.
- Serve in your favorite fluted glasses or stemware.
- We love this with homemade lime tortilla chips.
