Spinach Pepper Cups
- 2 large sweet peppers
- 4 slices cooked bacon, diced (optional)
- 14 onion, chopped
- 1 (15 ounce) can spinach, drained
- 2 tablespoons breadcrumbs
- garlic powder
- salt
- pepper
- 12 cup parmesan cheese, shredded
- Halve the peppers lengthwise, remove seeds and membranes.
- In microwave-able dish, arrange peppers, cut side down.
- Cover & cook on high 2-3 minutes.
- Drain & set aside.
- Mix together all remaining ingredients, leaving 1T parmesan & some bacon pieces for garnish later.
- Pile mixture into pepper cups.
- Cook, uncovered, on high 3-5 minutes, or until heated through.
- Top with bacon garnish & cheese.
