My Daughter's Favorite Clear Soup with Lots of Spinach
- 1 more than 1/2 batch Spinach
- 2 Eggs
- 1 large Dashi base
- 1 1/2 tsp Salt
- 1 tbsp Mirin
- 1 tbsp Usukuchi soy sauce
- Blanch the spinach in boiling salted water.
- Transfer the spinach to a bowl of cold water.
- Squeeze water out from the spinach.
- Remove the ends and cut into 3 cm pieces.
- Beat the eggs.
- In a pot, add the dashi base, mirin and usukuchi soy sauce and bring to a simmer.
- Add the spinach.
- Spread the beaten eggs over the spinach.
- The eggs will cook faster if you microwave them for 25-30 seconds before adding to the soup.
- Cover with a lid and bring back to a simmer.
- Turn off the heat.
