My Daughter's Favorite Clear Soup with Lots of Spinach

  1. Blanch the spinach in boiling salted water.
  2. Transfer the spinach to a bowl of cold water.
  3. Squeeze water out from the spinach.
  4. Remove the ends and cut into 3 cm pieces.
  5. Beat the eggs.
  6. In a pot, add the dashi base, mirin and usukuchi soy sauce and bring to a simmer.
  7. Add the spinach.
  8. Spread the beaten eggs over the spinach.
  9. The eggs will cook faster if you microwave them for 25-30 seconds before adding to the soup.
  10. Cover with a lid and bring back to a simmer.
  11. Turn off the heat.
