Bruschetta with Balsamic Vinegar Glaze

  1. The first thing I do is preheat the oven to 400 degrees.
  2. In a small sauce pan, I add all of the ingredients for the balsamic vinegar glaze and cook over medium heat until the mixture has reduced to a syrupy consistency.
  3. It will take about 10 minutes to cook, and you will have to stir occasionally.
  4. Then I line a cookie sheet with foil.
  5. Next I take the bread and thinly slice.
  6. I drizzle the bread slices with olive oil, and some of the Balsamic vinegar glaze and bake until the bread is nice and toasty.
  7. Next I rinse the tomatoes and cut them into quarters and add to a bowl.
  8. I then take the onion and very finely dice and add to the bowl.
  9. Next I run the garlic through a microplane and, yes you guessed it, add to the bowl.
  10. Rinse the basil leaves and then lay them on top of each other.
  11. Roll the leaves into a little ball and chop away, adding them to the bowl once chopped.
  12. Drizzle some good extra virgin olive oil, salt and pepper and combine all the ingredients.
  13. The next thing you need to do is take the mozzarella cheese and start cutting thin slices about 1/4 of an inch thick.
  14. Lastly, assemble the toasts.
  15. First take the bread and top with the cheese, then spoon over the tomatoes, onion and basil mixture and top off with the balsamic vinegar glaze.
  16. Your mouth will thank you and so will everyone who tries this.
