Tuna Noodle Casserole by Jim T J
- 1 cup uncooked elbow macaroni
- 3 stalks celery, chopped
- 1 medium onion, diced
- 2 (5 ounce) cans tuna, drained & flaked
- 12 cup mayonnaise
- 1 (10 1/2 ounce) can condensed cream of mushroom soup
- 14 cup pimientos or 14 cup roasted red peppers or 14 cup green olives, chopped or 8 ounces sweet peas
- 12 cup grated mozzarella cheese
- 12 cup grated cheddar cheese (the sharper the better)
- 14 cup crushed potato chips
- cook macaroni in salted water until tender (not al-dente).
- saute celery and onion in butter until tender, but not browned.
- combine macaroni, celery, onion, tuna, mayo, soup in 2 quart casserole.
- add in optional veggie and 2/3 of the cheeses - mix well.
- top with remaining cheese, then crushed chips.
- bake @ 350 20-25 minutes.
- enjoy.
