Jerk Sauce and/or Marinate (Home made)
- 5 Habanero
- Scotch Bonnet peppers
- 1 TBSP Thyme
- 3 TBSP ground all-spice (fresh ground is best)
- 4 cloves of garlic
- 1 Medium Scallion (both green & white part)
- 1 TBSP brown sugar
- 1 TBSP salt - for marinade, 1/2TBSP for sauce
- 1 TSP fresh ground black pepper
- 1 TSP ground cinnamon
- 1 TSP nutmeg
- 1 TSP ginger
- 1/4 cup white vinegar
- 1/4 cup olive oil
- 1/4 cup light soy sauce
- 2 lime
- 1 cup orange juice (adjust qty for right consistency)
- Put all ingredients in blender Blend until well mixed and ground but not liquified
