Sig's Courgette and Sweet Potato Stew with Spicy Tofu.
- 3 tbsp olive oil
- 1 medium onion, chopped
- 5 clove garlic chopped
- 2 1/2 inch piece of ginger chopped
- 2 small courgette ( zucchini ) chopped into cubes
- 1 1/2 lb sweet potatoes chopped into cubes
- 1 tbsp smoked paprika
- 1 can plum tomatoes
- 250 ml pear, peach or pineapple juice
- 150 grams smooth peanut butter.
- Gently heat the oil, add the onions and soften them.
- Add the finely chopped ginger and then the finely chopped garlic.
- Cook until soft
- Add the bite sized chopped chunks of courgette ( zucchini ) and sweet potato, cook until they are almost soft
- Add the smoked paprika and the cayenne pepper, mix gently but well
- Add the canned tomatoes , break them down gently
- Add the smooth peanut butter
- Simmer until vegetables are cooked to your liking.
