Adam's Apple Cake
- 1 1/4 cups flour, all-purpose
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon ground
- 1/4 teaspoon salt
- 1/4 cup butter or margarine
- 1 each eggs beaten
- 1/2 cup applesauce
- 13 cup molasses light
- 1/4 cup raisins, seedless
- 3/4 cup powdered sugar sifted
- 4 teaspoons lemon juice
- In a medium mixing bowl combine flour, baking soda, cinnamon, and salt.
- Cut in butter or margarine until the mixture resembles coarse crumbs.
- In a small mixing bowl stir together egg, applesauce, and molasses; stir into flour mixture just until moistened.
- Stir in raisins.
- Turn into a greased and floured 8x8x2-inch baking pan.
- Bake in a 350F (180C) oven for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean.
- Cool in the pan 15 minutes.
- Remove from pan, if desired.
- Combine powdered sugar and lemon juice; spread over warm cake.
- Serve warm or cool.
