Herbed Summer Squash Recipe

  1. Cut squash in 1/2-inch slices.
  2. Heat butter in frying pan, add in onions, celery and saute/fry for 3-4 min.
  3. Combine salt, pepper, parsley and oregano and stir into mix in pan.
  4. Add in sliced squash and mix well.
  5. Cover pan tightly and cook gently till squash is just tender, usually about 8-10 min.
  6. Stir gently 2 or possibly 3 times during cooking.
  7. Serves 6.
  8. Optional: Add in a small can of tomatoes when adding squash.
