Deep-Fried Bitter Melon Seasoned with Garlic & Cheese

  1. Cut the bitter melon in half and remove the seeds and insides.
  2. Cut into 5 mm wide slices and sprinkle with salt.
  3. Soak in water to remove the bitter taste.
  4. Place the ingredients into a plastic bag and shake to combine.
  5. Dry off the bitter melon slices and add to the bag.
  6. Add air to the bag and shake.
  7. Coat neatly with the powder.
  8. Heat oil to 170C and deep-fry the bitter melon for 2-3 minutes.
  9. Once they are crisply fried, they're done.
