Cherry Parfaits
- 1 cup italian-style ricotta cheese
- 1 cup powdered sugar
- 14 cup sour cream or 14 cup plain yogurt
- 14 cup iced coffee
- 1 12 cups graham crackers
- 1 (21 ounce) can cherry pie filling
- 6 cherries
- 6 fresh mint leaves (optional) or 14 cup grated chocolate, to garnish (optional)
- In a large bowl, combine ricotta cheese, powdered sugar, sour cream and iced coffee; mix well and set aside.
- In a blender or food processor, process graham crackers; in small batches, until finely crushed.
- In an 8 ounced parfait glass, add 2 tablespoons ricotta cheese mixture, 2 tablespoons graham cracker crumbs, and 2 tablespoons cheery pie filling.
- Repeat 1 more time.
- Finish with a dollop of ricotta cheese mixture, a cherry and a mint leaf.
- 6.
- Garnish with grated chocolate before serving if desired.
- Refrigerate any left overs.
