Fresh Green Peas With Pearl Onions
- 1 cup pearl onions
- 2 cups shelled fresh peas
- 1 red sweet pepper, cored and seeded and cut into 1/4-inch cubes
- 1 cup finely shredded lettuce
- 2 tablespoons butter
- Salt and freshly ground pepper to taste
- Place unpeeled onions in a small saucepan, cover with water and bring to a boil.
- Drain.
- Let cool, then peel.
- Combine all ingredients in a small heavy saucepan with a tight-fitting cover.
- Add 3 tablespoons of water, bring to a boil and simmer over low heat for 10 minutes.
- Do not overcook.
