Beef and Vegetables in a Pita
- 1 lb ground beef
- 1 onion, chopped
- 12 teaspoon minced garlic
- 12 lb fresh mushrooms, sliced
- 1 14 lbs fresh spinach, cleaned and chopped
- 2 tablespoons drained capers
- 14 teaspoon salt
- 14 teaspoon pepper
- 4 -6 pita breads, split open at one edge
- 1 tomatoes, chopped
- 12 cup plain yogurt
- In a skillet, cook onion and beef over medium high until beef is crumbly and brown.
- Drain off excess fat.
- Stir in garlic, mushrooms and spinach and cook, stirring frequently, until spinach is tender, 3-4 minutes.
- Stir in capers, salt and pepper.
- Spoon mixture into pita breads and top with tomato and yogurt.
