Chicken and Pineapple Salad
- 1 cup mayonnaise
- 13 cup mango chutney, chopped
- 14 cup fresh lime juice
- 2 teaspoons grated lime zest
- 12-1 teaspoon curry powder
- 12 teaspoon salt, to taste
- 4 cups diced cooked chicken breasts
- 12 cup fresh pineapple chunk
- 12 cup thinly sliced green onion
- 14 cup dried cranberries
- butter lettuce leaf, for lining plates
- 12 cup slivered almonds, toasted
- In a bowl, combine the mayo, chutney, lime juice, lime zest, curry powder, and salt.
- In the same bowl, mix the chicken, pineapple, onions, and cranberries with the dressing.
- Divide mixture evenly among 6 lettuce-lined plates and sprinkle with almonds.
