Delicious Meatloaf
- 1 onion
- 2 ribs celery
- 1 green pepper
- 2 tbsp. oil
- Salt and pepper
- 1-1/2 cup bread crumbs
- 1 tbsp. prepared horseradish
- 3 tbsp. catsup
- 1 packet Lipton beefy onion soup mix
- 1 tbsp. dried onions
- 1/2 tbsp. tarragon
- 2 eggs
- 5 lb. ground beef
- Heat oven to 350 degrees Chop onion, celery and green pepper.
- Heat oil in a skillet.
- Add vegetables.
- Season with some salt and pepper.
- Stir occasionally and fry for a few minutes till the onions in the pan begin to turn translucent.
- Transfer the fried vegetables to a large bowl, along with the breadcrumbs, horseradish, catsup, onion soup mix, dried onions and tarragon.
- Mix with a fork.
- In a small bowl beat the 2 eggs with the fork.
- Add the beaten eggs to the breadcrumb mixture.
- Combine well.
- Add the ground beef and using hands mix everything very well.
- Transfer meat mixture to a foil lined roasting pan or baking dish.
- Shape into a loaf.
- Place in oven and bake for 1 hour and 15 minutes (75 minutes total).
