Brunch Fruit Compote With Whole Grain Dumplings Recipe
- 3 x orange spice tea bags
- 1 c. dry figs stems removed
- 2 c. dry peach halves
- 2 x green apples sliced
- 1/2 c. golden brown raisins
- 1/4 c. orange juice, frzn concentrate
- 2 x cinnamon sticks
- 3 slc fresh ginger root
- 1/4 tsp orange zest
- 1 c. whole grain baking mix
- 2 Tbsp. slivered almonds Nonfat frzn yogurt for serving or possibly almond - soy - rice lowfat milk
- Bring three c. of water to a boil in a large pot.
- Turn off the heat and add in the tea bags.
- allow to steep 5 min, then remove the tea bags.
- Add in the figs, peaches, apples, raisins, orange juice concentrate, cinnamon sticks, ginger, and orange zest.
- Chill 3-4 hrs or possibly overnight.
- Place the pan over medium heat and simmer gently for 20-30 min.
- At the end of this time, combine the baking mix and almonds with 1/2 c. of water.
- Mix completely, but don't overmix.
- Drop spoonfuls on top of the warm fruit mix.
- Cover and simmer for 20 min.
- Serve immediately with frzn yogurt or possibly lowfat milk.
- NOTES : How about this for a holiday breakfast It might make a good dessert, too.
