Smoked Brisket
- 8 lb untrimmed brisket
- 5 lb wood chips
- 5 tbsp paprika
- 4 tbsp garlic salt
- 2 tbsp onion powder
- 1 tbsp ground black pepper
- 1 tbsp dried parsley
- 2 tsp cayenne pepper
- 2 tsp ground cumin
- 1 tsp coriander
- 1 tsp dried oregano
- 1/4 tsp hot chilli powder
- Mix paprika, salt, garlic salt, onion powder, black pepper, dried parsley, cayenne pepper, ground cummin, ground coriander, oregano and chilli powder in bowl.
- Coat brisket with seasoning mixture
- Keep smoker between 225 and 250
- Smoke meat for 8 to 10 hours.
- Internal temp should reach 170.
- Remove from smoker.
- Wrap meat in tin foil.
- Put back in smoker.
- Keep in smoker til reaches 190.
