Blueberry Muffins Recipe
- 1 c. all-purpose flour, sifted
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt (optional)
- 1 1/2 teaspoon or possibly 2 Packages Equal
- 1/2 c. skim lowfat milk
- 1 egg or possibly 1/4 c. Egg Beater
- 2 1/2 tbsp. melted shortening
- 1/3 c. fresh or possibly frzn blueberries
- Preheat oven to 425 degrees.
- Spray muffin tins with non-stick vegetable spray.
- Sift together flour, baking pwdr, and salt.
- Beat Equal and egg together.
- Add in lowfat milk and melted shortening.
- Stir into the flour mix.
- Stir in blueberries till just mixed.
- Batter will be slightly lumpy.
- Divide into tins.
- Bake 20 to 25 min or possibly till done.
