Thai Chicken Satay Recipe
- 1 pound boneless chicken in bite size pcs
- 2 teaspoon curry pwdr
- 1 teaspoon grated fresh ginger
- 1 teaspoon chopped garlic
- 1 teaspoon cumin
- 1/2 c. coconut lowfat milk
- 1 tbsp. grated lemon peel
- 1/2 teaspoon chili pwdr
- Add in to a heated skillet: curry pwdr, ginger, garlic and cumin.
- Cook over medium heat till curry is slightly browned (1 minute).
- Add in this mix to coconut lowfat milk in a bowl.
- Add in lemon peel.
- Add in chili pwdr.
- Add in chicken marinate for 30 min.
- Put chicken pcs on skewers, you can also skewer onion pcs, pepper, bamboo shoots, mushroom slices.
- Grill over warm coals about 4 min.
- Serve with Peanut Sauce for dipping.
