Custard Pie
- 3 pears (Cornice or Bartlett)
- 14 cup unsalted butter
- 13 granulated sugar
- 13 cup all-purpose flour
- 2 teaspoons vanilla extract
- 3 large eggs
- 34 cup milk
- 14 teaspoon salt
- confectioners' sugar
- Preheat oven to 350F Butter a 9-inch pie dish.
- Peel, halve and core the pears; slice into 1/4-inch thickness lengthwise.
- Arrange slices, overlapping slightly in dish.
- In a blender, process butter, sugar, flour, vanilla, egg, milk, salt until smooth.
- Pour batter over pears; bake until golden and firm to touch, 40-45 minutes.
- Serve warm or at room temperature, dusted with confectioners sugar.
