Loaded Chicken Salad
- 4 small boneless skinless chicken breasts (1 lb.)
- 1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
- 4 cups tightly packed torn mixed salad greens
- 1 cup snow peas, trimmed
- 1/2 cup thinly sliced red onions
- 1/2 cup red pepper strips
- 1/2 cup fresh cilantro, stemmed
- 4 small radishes, thinly sliced
- 1/2 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
- Heat oven to 400 degrees F.
- Coat chicken with coating mix and bake as directed on package.
- Cool slightly.
- Slice chicken; toss with all remaining ingredients except dressing.
- Serve topped with dressing.
