Southwestern Beef and Beans
- 1 pound pinto beans dried
- 6 cups water cold
- 1/2 pound salt pork cut up
- 1 pound beef chuck steak cut into 1 inch cubes
- 1 each red chili peppers
- 1 each onions chopped
- 2 each garlic cloves minced
- 6 ounces tomato paste
- 1 1/2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon cumin seeds
- 1/2 teaspoon marjoram
- Soak beans in water overnight.
- Brown salt pork in skillet or slow-cooking pot with browning unit.
- In slow-cooking pot, combine soaked beans (with water), browned pork, and remaining ingredients.
- Cover and cook on low for 9 to 10 hours.
