Lebkuchen Cookies
- 12 cup honey
- 12 cup molasses
- 34 cup brown sugar
- 1 egg
- 1 tablespoon lemon juice
- 1 tablespoon grated lemon rind
- 2 34 cups flour
- 1 teaspoon cinnamon
- 12 teaspoon baking soda
- 1 teaspoon allspice
- 1 teaspoon clove
- 12 cup cut up citron
- 13 cup chopped nuts
- Mix honey and molasses together and bring to a boil.
- Cool thoroughly.
- Stir in sugar, egg, lemon juice and rind.
- Sift dry ingredients together and add to the above.
- Mix in citron and nuts.
- Chill dough overnight.
- Roll small amount at a time.
- Keep rest chilled.
- Roll 1/4 inch thick.
- Cut 1 1/2 x 2 1/2 inches.
- Place 1 inch apart on greased baking sheet.
- Bake until no imprint remains when lightly touched.
