Antipasta Cauliflower Pasta
- 1 chicken breast
- 12 head cauliflower
- 12 yellow onion
- 1 bunch green onion
- 4 -5 mixed mushrooms
- handful basil (up to you the amount but more is always good in my opinion)
- 1 (14 1/2 ounce) can diced tomatoes (flavored is best)
- 12 cup pasta sauce (your favorite)
- parmesan cheese or feta, if you want
- garlic salt
- pepper
- In a pot boil cauliflower with diced tomatoes for around 10 minutes to get the flavor into the cauliflower.
- Add garlic salt and pepper to taste.
- In a separate pan cook chicken for 10-15 minutes in pasta sauce.
- Add onions (yellow and green), basil, mushrooms, and garlic salt and pepper to taste to the chicken.
- Cook for another five minutes or until veggies are to your liking.
- Serve chicken and veggies over strained cauliflower and tomatoes.
- Add Parmesan cheese or feta now if you want.
