Sweet Chili Mango Cauliflower
- 1 head Cauliflower
- 1 cup Flour
- 1 Tablespoon Cornstarch
- 1- 1/2 cup Ice Cold Water (Seltzer Water Is Even Better)
- 1 pinch Salt
- 1 Mango, Peeled, Pitted, And Diced
- 1/2 cups Sweet Chili Sauce
- 1 teaspoon Soy Sauce
- 1 teaspoon Garam Masala
- 1 stalk Green Onion, Chopped
- Canola Oil, For Frying
- 1.
- Break the head of cauliflower into florets.
- 2.
- Bring a medium pot of water to boil.
- Add a pinch of salt and put cauliflower in.
- 3.
- Boil for about 10 minutes.
- Drain and allow to dry.
- 4.
- In a bowl mix flour, cornstarch, water and salt until smooth and all the lumps are blended out.

- In a deep pot bring an inch or two of oil to a temperature of 150 degrees C. 6.
- Place cauliflower into batter a few florets at a time to ensure they are coated well and place slowly into the hot oil.
- 7.
- Cook in small batches until the batter turns a nice golden brown.
- 8.
- Use a kitchen spider or slotted spoon to scoop cauliflower onto a plate with some paper towels.
- Repeat frying the rest.
- 9.
- In a saucepan add diced mango, sweet chili sauce, soy sauce and garam masala.
- Cook over medium heat until the mango is broken down and sauce is thickened.
- 10.
- Toss fried cauliflower in the sauce and coat well.
- 11.
- Serve in a dish and sprinkle with chopped green onion.
