Spiced Onion Marmalade

  1. Heat oil in heavy medium skillet over medium-high heat.
  2. Add onions and garlic; saute until onions just begin to brown, about 10 minutes.
  3. Add vinegar and sugar and cook 5 minutes, stirring often.
  4. Stir in tomato paste, ginger, cloves and nutmeg.
  5. Reduce heat to low and simmer until marmalade is thick, stirring often, about 1 minute.
  6. Season with salt and pepper.
  7. (Can be made 5 days ahead.
  8. Cover and chill.
  9. Rewarm before serving.)
