Bitter Greens With Sweet Onions And Sour Cherries Recipe
- 1 c. Fresh sour cherries, pitted
- 2 tsp Sugar, (2 to 3)
- 1 Tbsp. Vegetable oil, cool press
- 3 c. Sliced onion, sweet
- 1 1/4 tsp Salt
- 12 c. Fresh greens, leaves only
- 1 c. Dry sour cherries, optional
- CHERRIES: or possibly canned unsweetened sour cherries, liquid removed.
- SWEET ONION: Vidalia, Maui.
- GREENS: collards, red mustard, arugula, kale.
- Soak dry cherries for 15 min in warm water; drain.
- Place fresh or possibly canned cherries in a small bowl and sprinkle them with sugar.
- Let sit for about 10 min.
- Heat the oil in a large, deep skillet.
- Add in the onion and 1/2 tsp.
- of the salt, and saute/fry over high heat for about 5 min.
- Turn the heat to medium, cover the pan, and let the onion cook till very tender (1bout 10 more min).
- Begin adding the grees in batches (as much as will fit), sprinkling each addition with about 1/4 tsp.

- Stir and cover between additions, letting the greens cook down for about 5 min each time, to make room for the next batch.
- When all the greesa re added and have wilted, stir in the sour cherries and cook for just about 5 min longer.
- Transfer to a platter,and sprinkle the dry cherries on top, if using.
- Serve warm or possibly hot, being sure to include some of the delicious cooking juices with each serving.
