Stifatho
- 1 kg steak meat
- 30 grams butter
- 2 clove garlic, crushed
- 2 small onions. chopped
- 6 cm piece orange rind
- 410 grams can of tomatoes
- 1/2 cup dry red wine, not cooking wine
- 1/4 tsp cinnamon
- 2 tbsp white vinegar
- 1/4 tsp ground nutmeg
- 1 tsp sugar
- 1/2 cup water
- 1 tbsp olive oil
- 500 grams baby onions ,peeled
- Cut the steak into 2 cm pieces,heat half the butter and half of the oil in pan .Brown off the meat,remive from pan
- Add chopped onions .the garlic and the orange rind cook until onion is soft.
- Stir in the all other ingredients except extra spoon olive oil and baby onions.Simmer ,covered for an hour.
- In the meantime heat the extra spoonful of oil, add peeled baby onions in a pan.cool until well browned all over.
- Add onions to steak mixture, simmer covered for 20 minutes until steak and onions well tender.Remove lid and simmer for another 10-15 minutes until thickened slightly.
- Romove the orange rind before serving .
- Serve over rice or with new potatoes.
- Serves 4-6 people
