Ropa Vieja
- 1 tbsp Olive Oil
- 1 1/2 lb Flank Steak (cut in half)
- 1 large Onion (sliced 1/2 inch thick)
- 1 Green Pepper (sliced 1/2 inch thick)
- 1 Red Pepper (sliced 1/2 inch thick)
- 1 can Diced Tomatoes (28 oz)
- 1/4 cup Sofrito
- 3 tbsp Tomato Paste
- 2 clove Garlic (minced)
- 1 Bay Leaf
- 1 1/2 tsp Ground Cumin
- 1 tsp Dried Oregano
- 1/2 tsp Salt
- 2 cup Cooked rice.
- In a 4 quart slow cooker mix ingredients for the sauce.
- Heat oil in large skillet over med-high heat.
- Brown steak well on both sides.
- About 5 minutes.
- Add onions, peppers and browned steak to the sauce.
- Be sure steak is covered with the sauce.
- Cook until meat is fork tender.
- 10 - 12 hours on low, 5-6 hours on high or 3 hours at simmer on the stove.
- Remove meat to plate.
- Shred with two forks.
- Return to pot and stir.
- Serve over rice.
