Kaffir Lime Lemonade
- 2 cups water
- 1 cup sugar
- 10 kaffir lime leaves (available where Thai ingredients are sold)
- 1/2 cup fresh lemon juice
- 2 cups cold club soda or seltzer
- In a small saucepan combine the water, sugar and lime leaves over medium heat.
- Bring to a boil, lower the heat and simmer for 10 minutes.
- Set aside to cool.
- Refrigerate until cold.
- Fill each of 4 glasses with 1/2 cup of the syrup, 2 tablespoons lemon juice and 1/2 cup club soda.
- Stir.
- Add ice and serve.
