Quinoa in a Bowl with Soft-Set Fried Eggs
- 200 ml Quinoa
- 4 rashers Bacon
- 1/2 Broccoli
- 10 Brown button mushrooms
- 100 ml Parsley (finely chopped)
- 1 clove Garlic (finely chopped)
- 1 tsp Soup stock granules
- 1 tsp Coriander powder
- 2 Eggs
- Cut the broccoli into small pieces and blanch to retain crisp texture.
- Finely chop the parsley and quarter the mushrooms.
- Briskly saute the broccoli, mushrooms, and parsley with olive oil and season with salt and pepper.
- Transfer to a plate and set aside.
- Cut the bacon into small pieces and fry with garlic in olive oil.
- Add the quinoa, 2 cups of water, and soup stock granules and turn up the heat to high.
- Once it starts to bubble vigorously, reduce the heat to low and cook for about 15 minutes until all the water is absorbed.
- Stir occasionally.
- Add the coriander powder.
- Season the quinoa with salt and pepper and stir in the vegetables from Step 2.
- Top with soft-set fried eggs and serve.
