Pasta Salad
- 1/2 lb Mozzarella Cheese
- 3 cup Cherry Tomatoes
- 2 cup Black Olives
- 1 packages Short Pasta (Farfalle, Penne, etc...)
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Salt
- 1/4 cup Basil leaves (Optional)
- 2 tsp Balsamic Vinegar (Optional)
- Cook the pasta "al dente", which means hard pasta, so cook exactly the minutes it says in the bok or a minute less.
- Cool the pasta under running cold water.
- Cut the Mozzarella Cheese in small cubes
- Cut the Tomatoes in small cubes
- Cut the olives in for small slices
- Mix these 3 ingredients and add the Olive Oil and the salt.
- Mix everything with the pasta, and season a little more if it needs to.
- You can add some extra salt and olive oil, black pepper and balsamic vinegar.
- You might also add some basil leaves.
- Reserve in the fridge at least 30 minutes and then it's ready to be served!
