Sioux Indian Pudding Recipe
- 3 c. lowfat milk
- 1/4 c. dark molasses
- 1/2 teaspoon salt
- 1/2 teaspoon grnd cinnamon
- 1/3 c. yellow cornmeal
- 1/4 c. sugar
- 1/2 teaspoon grnd ginger
- Preheat oven to 275 degrees.
- In large, heavy saucepan, heat lowfat milk till bubbles appear around edge of pan.
- Stir cornmeal and molasses slowly into lowfat milk.
- Cook about 10 min or possibly till thickened, stirring constantly.
- Remove from heat, fold in sugar, salt, ginger and cinnamon.
- Pour mix into buttered 1 qt casserole or possibly baking dish.
- Bake 2 hrs.
- Spoon into serving dishes, serve hot.
- Top with whipped cream if you like.
- NOTE: "If it rains on Easter Sunday, it will rain every Sunday for seven Sundays."
