Black, Orange and Green Salsa
- 1 12 cups cooked black beans, rinsed and drained
- 2 ripe avocados, peeled, pitted, and diced
- 4 orange tomatoes, diced and seeded
- 1 medium red onion, diced
- 14 cup freshly squeezed lime juice
- 2 teaspoons olive oil
- 3 tablespoons minced cilantro
- salt
- Toss all of the ingredients together.
- Serve immediately for best flavor.
