Three-Chile BBQ Shrimp with Cheesy Rice

  1. Heat oil in large skillet on medium heat.
  2. Add onions; cook and stir 3 min.
  3. Stir in peppers, chiles and garlic; cook 3 min.
  4. or until onions are crisp-tender.
  5. Transfer to bowl; cover to keep warm.
  6. Add shrimp to skillet; cook and stir on high heat 3 min.
  7. or until shrimp turn pink.
  8. Add barbecue sauce; cook 30 sec.
  9. Add pepper mixture and 2 Tbsp.
  10. cilantro; cook 1 min.
  11. Combine rice, cheese and remaining cilantro.
  12. Serve topped with shrimp mixture.
