Saucy Creole-Style Shrimp Skillet
- 6 slices OSCAR MAYER Bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 1 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 large green pepper, chopped
- 1 lb. large (26 to 30 count) uncooked shrimp, cleaned
- 1 can (14.5 oz.) diced tomatoes and green chiles, drained
- 1 cup chicken broth
- 1/8 tsp. ground red pepper (cayenne)
- 2 cups hot cooked rice
- 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Cook bacon and onions in large skillet on medium-high heat 10 min.
- or until bacon is crisp, stirring frequently.
- Add green peppers; cook an additional 3 min.
- or until peppers are crisp-tender, stirring occasionally.
- Stir in shrimp; cook 3 to 5 min.
- or until shrimp turn pink, stirring occasionally.
- Add tomatoes, broth and red pepper.
- Bring to boil.
- Reduce heat to medium-low; simmer 3 min.
- or until heated through.
- Serve over the rice.
- Top with sour cream.
