Pea Puree Toast
- 10 oz. frozen peas
- 1/2 c. mint
- 1/2 c. water
- 1/4 c. half-and-half
- 1 tbsp. butter
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 12 slice baguette
- In a saucepan, heat frozen peas, mint, and water to boiling.
- Cook on medium 5 minutes or until tender, stirring.
- Drain.
- Puree pea mixture in a food processor with the half-and-half, butter, salt, and pepper.
- Toast 12 buttered baguette slices.
- Top with puree.
