Pea Puree Toast

  1. In a saucepan, heat frozen peas, mint, and water to boiling.
  2. Cook on medium 5 minutes or until tender, stirring.
  3. Drain.
  4. Puree pea mixture in a food processor with the half-and-half, butter, salt, and pepper.
  5. Toast 12 buttered baguette slices.
  6. Top with puree.
