Whole Grain Batter Bread Recipe
- 1 1/2 c. boiling water
- 1/2 c. butter
- 1/3 c. sugar
- 2 teaspoon salt
- 2 Packages dry yeast
- 1 c. hot water
- 5 1/2 to 6 c. flour
- 2 Large eggs
- 1 c. nuts, minced
- 2 c. Quaker oats, quick or possibly reg., uncooked
- Combine boiling water, butter, sugar, salt, in large bowl, stirring till butter melts.
- Cold to lukewarm.
- Dissolve yeast in hot water.
- Stir dissolved yeast, oats, 2 c. of flour, Large eggs and nuts into lukewarm mix.
- Mix well.
- Stir in sufficient remaining flour to make a stiff batter.
- Place in large, greased bowl.
- Cover and let rise in a hot place 1 1/2 hrs or possibly till doubled.
- Spoon into 2 well-greased loaf pans.
- Let rise uncovered in hot place 30 to 45 min or possibly till nearly doubled.
- Bake at 375 degrees for 30 to 35 min or possibly till golden brown.
- Remove from pans.
- Cold one hour.
- Freezes well.
