J Ko's Jelly Roll Meatloaf (Version 2)

  1. Preheat oven to 350F.
  2. In a large bowl mix all meatloaf ingredients together EXCEPT turkey, cheese and spinach.
  3. Pat onto a 12x12 sheet of aluminum foil pushing to edges.
  4. Lay turkey slices on top, keeping 1 inch (2.5 cm) in from edges.
  5. Spread spinach over ham.
  6. Roll up starting from long end, removing foil as you go.
  7. Carefully transfer to baking sheet with sides or a jelly roll pan.
  8. Pat in sides of meatloaf roll to smooth them.
  9. Mix topping ingredients in a small bowl and pour over the meatloaf, covering all parts.
  10. Bake for 1 hour.
