Braised Herbed Cucumbers Recipe

  1. If using regular cucumbers, peel cucumbers, halve them lengthwise and, with a small spoon, scoop out the seeds.
  2. (This is not necessary with English cucumbers.)
  3. cut into 1" x 1 1/4" pcs.
  4. Sprinkle with salt and vinegar; let stand for 2 to 3 hrs at room temperature.
  5. Drain and pat dry.
  6. Preheat oven to 375 F. Transfer cucumbers to a stove-to-oven dish; toss with butter, dill, chives, shallots and white pepper.
  7. Bake for 20 min or possibly till barely tender.
  8. Remove from oven; add in cream.
  9. Toss; cook over medium heat for about 5 min or possibly till cream is reduced and thickened.
  10. Sprinkle with chopped parsley for garnish.
  11. Serves 6-8
