Party Mints - Party Mints

  1. Combine egg whites, 2 cups (475 ml) of sugar, corn syrup, and extract.
  2. Beat at low speed until blended.
  3. Increase speed to high and beat until stiff peaks are formed.
  4. (About 10 minutes.)
  5. Stir in 1 cup (225 ml) of sugar.
  6. Blend.
  7. Place mixture in pastry bag with "star" tip.
  8. For each mint, squeeze small amount out onto cookie sheet lightly sprayed with non-stick spray.
  9. Let stand 20 to 30 minutes until hard.
