Sweet and Spicy Chicken
- 1 lb. chicken breast cut into 1/2 inch cubes
- 3 tbsp. taco seasonings
- 2 tbsp. vegetable oil
- 1 jar (11 oz.) salsa
- 1/2 cup peach preserves
- Hot cooked rice
- Place chicken in plastic bag with taco seasonings and toss to coat.
- Brown chicken in skillet with vegetable oil.
- Combine salsa and preserves.
- Stir into chicken.
- Bring to a boil.
- Reduce heat and simmer for 2 to 3 minutes.
- Serve over rice.
