Sweet and Spicy Chicken

  1. Place chicken in plastic bag with taco seasonings and toss to coat.
  2. Brown chicken in skillet with vegetable oil.
  3. Combine salsa and preserves.
  4. Stir into chicken.
  5. Bring to a boil.
  6. Reduce heat and simmer for 2 to 3 minutes.
  7. Serve over rice.
