Potato Soup

  1. Melt butter in soup pot.
  2. Sweat carrots, celery, and onions until soft.
  3. Add chicken stock, potatoes, parsley, thyme, salt, and pepper.
  4. Simmer 20 minutes, or until potatoes are medium soft.
  5. Add bacon and milk.
  6. Heat through.
  7. Add enough potato flakes to bring to desired consistency.
