Pork Barbecue With Melon Salsa

  1. For salsa, combine honeydew, cantaloupe, watermelon, mint, lemon juice, and honey in a medium mixing bowl.
  2. Cover and chill for up to 1 hour.
  3. Sprinkle Jamaican jerk seasoning evenly over meat, pressing onto surface.
  4. For a charcoal grill, arrange hot coals around a drip pan.
  5. Test for medium-high heat above pan.
  6. Place meat on grill rack over pan.
  7. Cover and grill for 30-35 minutes or until meat thermometer registers 155*F.
  8. For a gas grill, preheat grill.
  9. Reduce heat to medium-high.
  10. Adjust for indirect cooking.
  11. Grill as above.
  12. Remove meat from grill.
  13. Cover with foil and let stand for 10 minutes.
  14. (The meat's temperature will rise 5*F during standing.)
  15. Slice pork diagonally and serve with salsa.
