Apple Braised Chicken

  1. In a large, heavy-bottomed skillet, warm oil over high heat.
  2. Toss chicken with flour in a medium bowl, patting off excess.
  3. Place chicken in skillet and brown well on both sides.
  4. Remove chicken from pan and set aside.
  5. Reduce stove temperature to low and add the onion (cut in long strips) to the skillet.
  6. Saute, stirring often until onion is tender and lightly browned.
  7. Stir in cider, broth, salt, and ginger.
  8. Place chicken back in the pan.
  9. Bring to a simmer.
  10. Cover and cook for 25 minutes.
  11. Add apple slices and cook until apples begin to soften (about 2 minutes).
  12. While the chicken simmers, fill a pot with water for the pasta.
  13. Add cinnamon and bring to a boil.
  14. Cook and strain pasta.
  15. Plate the linguine.
  16. Use tongs to transfer chicken, onion, and apples on top of the pasta
  17. Leave the remaining sauce on medium heat to thicken for about 2 minutes.
  18. Pour over chicken.
