AMIEs Sweet PEPPERs Stewed with Tomatoes
- 4 tbsp extra virgin olive oil
- 1 small onion, sliced
- 1 clove garlic, thinly sliced
- 3 large red peppers, thickly sliced lengthways
- 3 large yellow pepper, thickly sliced lenghtways
- 2 medium tomatoes, diced
- 3 tbsp white wine vinegar
- 1 tsp sugar
- 2 tbsp finely chopped oregano
- 1 salt and freshly ground black pepper
- Heat the oil in a medium-based saucepan over low-medium heat.
- Add the onion and garlic, saute until softened.
- Add the peppers and cook for 15 minutes, until they begin to soften.
- Add the tomato, vinegar, oregano and sugar.
- Cook for 15 minutes, until softened and flavours have developed.
- Season with salt and pepper.
- Serve hot or cold.
