AMIEs Sweet PEPPERs Stewed with Tomatoes

  1. Heat the oil in a medium-based saucepan over low-medium heat.
  2. Add the onion and garlic, saute until softened.
  3. Add the peppers and cook for 15 minutes, until they begin to soften.
  4. Add the tomato, vinegar, oregano and sugar.
  5. Cook for 15 minutes, until softened and flavours have developed.
  6. Season with salt and pepper.
  7. Serve hot or cold.
