Oysters Baked with Bread Crumbs and Romano

  1. Preheat oven to 500 degrees (250 C.).
  2. Heat 1 tsp (5 ml).
  3. of oil in skillet on medium heat.
  4. Add mushrooms, salt and pepper.
  5. Stir constantly for 4 minutes.
  6. Refridgerate mushrooms until chilled.
  7. Cut mushrooms to fine pieces, set aside.
  8. Dry roast the anise seeds; cook in skillet over medium until color changes and aroma releases, 2-3 minutes.
  9. Crush seeds with rolling pin; set aside.
  10. In a bowl mix bread crumbs, cheese, thyme, oregano, red pepper flakes, paprika, garlic, mushrooms, and remaining 3/4 cup (175 ml) olive oil.
  11. Blend using hands.
  12. Top each oyster with mixture, sprinkle bread crumbs over top.
  13. Bake 10 minutes.
