Vickys Spicy Grilled Salmon, Gluten, Dairy, Egg & Soy-Free
- 4 salmon fillets, around 200g each
- 4 clove garlic, finely chopped
- 2 tbsp extra virgin olive oil
- 1 pinch allspice
- 1 pinch cinnamon
- 1 juice of 2 limes
- 2 tsp chipotle chilli salsa
- 1/4 tsp ground cumin
- 1 pinch sugar
- 1 salt & pepper to taste
- Put everything apart from the salmon into a bowl and stir well to combine
- Coat the salmon fillets with this marinade, then place them into a glass dish to absorb the flavours for 4 hours, or better overnight, in the refrigerator
- When ready to cook, place them on a grill pan and cook under a preheated medium grill (broiler) for 3-4 minutes each side
- Serve with tomato wedges, finely chopped spring onions/scallions, shredded lettuce and some lime slices for garnish
