Vegetable Pasta Salad Recipe
- 1 (16 ounce.) pkg. pasta of choice
- 1 bunch of broccoli
- 1 purple onion
- 1 pkg. shredded carrots
- 10 cherry tomatoes
- 1 c. Parmesan cheese
- 1 c. bacon bits
- Cook pasta as directed on the package.
- Cut off the head of each broccoli stalk and chop the purple onion.
- In large mixing bowl combine the pasta, broccoli, onion and carrots.
- Pour the entire bottle of salad dressing over the pasta mix and toss lightly.
- Place mix in the refrigerator overnight or possibly for several hrs or possibly allow salad ingredients to be marinated.
- Immediately before serving, slice cherry tomatoes in half and place on the top of the salad.
- Add in Parmesan cheese and bacon bits to taste.
- Number of servings 24 - 1/2 c. serving.
