Broccoli and Rice Stir Fry

  1. In a saucepan, bring 3 cups water to a boil.
  2. Stir in rice.
  3. Reduce heat, cover, and simmer for 20 minutes.
  4. Heat oil in a large skillet over medium heat.
  5. Saute broccoli until tender crisp, and add scallions.
  6. Remove from skillet.
  7. Scramble eggs; return broccoli mixture to pan.
  8. Stir in cooked rice, soy sauce, salt and pepper.
